i always want
dinner to be easy, sometimes i need it to be easy, and sometimes i just want mexican!
take your favorite can of refried or
black beans, your favorite can of chili, and a jar or block or bag of
vegan 'queso,' (our favorite is above, a brand from a texas company called
'food-for-lovers.' it's spicy and creamy and has a base of nutritional
yeast! look it up online @ food-for-lovers.com if you can't find it in
your local health food store, or call me and i'll get you a jar!)...spread the beans in the bottom of a pan, pour the chili on
top, and finish with the cheese! bake at 350 until bubbly! finish it all off
with fresh tomatoes or your favorite red or green salsa...grab a bag of
tortilla chips and set it all in the middle of the dinner table! then
yell, "DINNER!"
