we made amy's zucchini cake!  i didn't have the non-dairy cream cheese for the frosting, so i tried silken tofu in it's place...yuck...i opted for a little frosting made with powdered sugar and chocolate hazelnut milk, even though this cake needs no topping at all!  this was tasty out of the oven, not overly sweet, would make a great cake with coffee, and amy was NOT kidding, straight out of the fridge the next day, it is rich and moist and totally delicious, better than fresh from the oven!  with a few more whole oats (1/2 cup or so) and maybe some shredded coconut this recipe would make a great granola bar!  i may try this recipe in the dehydrator (when i get one!)  my toughest critic, age 12, said "this is the BEST healthy dessert you have ever made!"  thank you amy!
